The game allows you to choose between multiple subclasses for each of the three characters in your party. There are two points in Trials of Mana where you can switch classes. When you reach level 18 you can choose your second class in Trials of Mana and when you are level 38 you can pick your third subclass.
To choose your character class at random points in the game you need to find the Goddess Scale, a consumable item in Trials of Mana. The Goddess Scale is found in Treasure Chests all around the game. You can use this item to reset characters to their base class, which means you can retain your second and third class.
As I said, you can pick your second class at level 18 but you need to locate the Mana Stone to select the second class. You can choose your third class at the Mana Sanctuary in Trials of Mana.
